picked up the electronic beater first time in months...
am baking "Red Velvet Cupcakes with Cream Cheese Frosting".
so anyway,baking cupcakes isn't the hard part,
you just mix and beat the egg,vanilla extract,red coloring,buttermilk and vinegar.
then add in the flour,baking soda,salt,sugar and cocoa powder and continue beating until smooth.
then pour into the cups,
and pop it into the oven for 22minutes...
turn the tray once at around 10minutes after putting them in the oven.
they don't raise much,and even if it did, it'll deflate after you take the tray out of the oven,so if you want,you can fill the cup 80% full...
hard part would be the frosting(which i failed in making them).
reminder to self:never use fine sugar,ONLY ICING SUGAR.
fine sugar don't melt when your mixture has only cream cheese,butter and vanilla extract.
the recipe said "beat until light and fluffy" i think, but i couldn't get that result even after beating for half an hour or so.
all i freakin' get is this:

and crunchy too,since the fine sugar did not melt *faints*

anyway i scooped them into my cup lah.
and refrigerate them,at least it the coolness will reduce the gooey-ness of my so called ''frosting''.
